That's right...I'm thankful it's MONDAY. Monday means my husband typically has off work and that means whole chicken in the crock pot.
While I'm OK with my crock pot being left on while I'm out, many recipes cook for 5-6 hours so putting it on before work means it will be done hours before I get home. Which brought me to a genius solution...my husband can do it on his day off!
This masterpiece is so easy, produces versatile leftovers and is the juiciest fall-off-the-bone chicken. It will change your life. Just minutes of hands on work produces four generous portions of yumminess. I'm always excited to come home on Monday to the amazing smell of the chicken slowly cooking. The best part is it goes with so many different side dishes such as the pearl barley salad in the picture and the leftover chicken can be enjoyed in the same manner or shredded up for soup, salad, fajitas, casseroles and much more.
The recipe is super simple: rub spices on the chicken and place on two sliced onions in the crock pot on low for 5 hours. For the spice mixture, you can try so many different variations. I typically use this blend except I substitute half the salt for Goya Adobo Light - see below.

1 teaspoon onion powder
1 teaspoon thyme
½ teaspoon garlic powder
