About My Blog: What does it mean to eat healthy? When you consider food allergies, personal preferences, nutrition goals, cooking habits, budgets and medical conditions, you quickly realize there isn't a one size fits all approach. The purpose of this blog is for me to share my tips, recipes and stories that hopefully motivate you to find your version of eating healthy. The name "Not Allergic to Healthy" comes from my never ending challenge of eating healthy with limitations.
About Me: I'm a happily married New Jersey woman. In addition to my full-time Marketing and Communications career, I enjoy spending my free time learning about nutrition, doing recipe makeovers, exercising, reading and meal planning. I'm not a medical professional or chef. I am a person who has spent almost my entire lifetime with Type 1 Diabetes, several food allergies (nuts and dairy) and a passion for healthy cooking.
Why I Write: You can find pros and cons to every food. It's very challenging for people trying to learn how to live a healthy lifestyle. There are too many diets...lifestyle changes can be much more manageable for long-term health. I often find myself looking at recipes or menus and saying, that would be so much healthier and better tasting if it had or didn't have (fill in the blank). When someone has that aha moment that something can taste good and be food for them, I feel more inspired than ever.
Also, friends and family members often ask me for guidance on what and how much to eat. They don't know where to begin and each have their own reasons to make a change. I realized that I could clear my head and help them at the same time if I wrote everything down and thus my blog was born. While I can't tell anyone what to eat from a medical standpoint, I can tell you what works for me and it might help you too!
